Sauté the peppers, spring onions, chicken, and mushrooms in the sesame oil for 6-8 minutes, and once the liquids have evaporated add the balsamic vinegar and continue to cook until it evaporates. Pour the lemon juice over the avocado and throw it in a wok or wide pan together with the garlic, ginger and rice. Continue to sauté for another 10 minutes, add salt, freshly ground pepper and parsley, and then serve.
