Ingredients

  • 2 red peppers, finely chopped
  • 1 garlic clove, crushed
  • 1 avocado, finely chopped
  • 1 tsp ginger, finely chopped
  • 2 tbsp GALAXY honey balsamic vinegar
  • 1 tbsp GALAXY lemon juice
  • 1 tbsp parsley, finely chopped
  • 3 tbsp sesame oil
  • 500 g basmati rice, boiled
  • 800 g chicken fillets, cut into bite-sized pieces
  • 100 g mushrooms
  • Execution

    Sauté the peppers, spring onions, chicken, and mushrooms in the sesame oil for 6-8 minutes, and once the liquids have evaporated add the balsamic vinegar and continue to cook until it evaporates. Pour the lemon juice over the avocado and throw it in a wok or wide pan together with the garlic, ginger and rice. Continue to sauté for another 10 minutes, add salt, freshly ground pepper and parsley, and then serve.
