1 kg desalted cod fillet2 tbsp balsamic cream with honey2 tbsp balsamic vinegar2 tbsp honey2 tbsp sesame seedsflour and sunflower seed oil for fryingrocket for servingFor the batter:
1 cup flour1 egg1 tbsp honey A few drops of balsamic vinegar 1 tsp dry yeast Salt Execution
First prepare the frying batter: mix the flour with the yeast and a little salt, then add the lightly beaten egg, balsamic cream and half a cup of water. Mix the ingredients, cover the batter with cling film and let it sit for half an hour at room temperature. Cut the cod fillets into small pieces, flour them and dip them in the batter. Pour a generous amount of oil into a deep pan and, once hot, fry the cod pieces, a few at a time. After frying, place them on a sheet of absorbent paper towel. Place the fried cod on a plate with the rocket. Mix the honey and vinegar and pour over the cod pieces. Lastly, sprinkle with sesame seeds.
