200 g spinach200 g rocket200 g lettuce, various (lollo rosso, leaf lettuce, etc.)12 cherry tomatoes, halved4 spring onions6-8 mozzarella ballsSeeds of 1 pomegranateFor the dressing 5 tbsp olive oil
2 tbsp GALAXY Lemon Juice
3 tbsp GALAXY Balsamic
Cream with Pomegranate
1/2 teacup roughly chopped walnuts
salt, pepperExecution
Wash the vegetables thoroughly and tear by hand without the stems. Place in a wide salad bowl with the spring onions, toss well and add the cherry tomatoes and pomegranate seeds. Place the mozzarella balls on top. Blend the walnuts until powdered, add the oil and the GALAXY Balsamic Cream with Pomegranate, salt and pepper, and blend into a thick mixture. If necessary, add some olive oil and mix. Pour the dressing over the salad and serve.
