braise the garlic in a small amount of oil and then add the meat and sauté so that it can retain its liquids. add the wine, brandy and galaxy balsamic cream with honey. as soon as the alcohol has evaporated, add the orange juice and rosemary, and let it cook at a low temperature for about 50 minutes. just before it is ready, add the salt, pepper and plums.
