Roasted vegetables with feta cheese and blackcurrant balsamic cream

Ingredients

2 medium-sized aubergines, 2 red peppers, 2 green peppers, 2 large courgettes, fresh rosemary, olive oil, fresh oregano, 200 g feta cheese, 1 level tbsp coarse salt, Galaxy Blackcurrant Balsamic Cream

Execution

Preheat the oven to 220°C. Wash and dry the vegetables. Remove the stems and seeds from the peppers. Medium slice the courgettes and aubergines, quarter the peppers and finely slice the onions. Place everything in a pan and mix in the oil and salt. Roast the vegetables at 220°C for 15 minutes. Crumble the feta cheese, sprinkle it over the vegetables and pour over the Blackcurrant Balsamic Cream.
